About Our Beef
Our grass fed and finished beef is raised without hormones or antibiotics. No herbicides are used in our pastures. Intensive rotational grazing by the cattle keeps the pastures healthy and lush.
Grass finished beef is raised on forage, their native diet. In contrast, beef finished in a feedlot is fed grain, soy, and other supplements. Hormones and other growth-promoting additives are common.
In order to provide a high quality, substantial diet, the beef producer must become a grass farmer, which is good for the pastures.
Grass finished beef is more nutritious than grain fed beef--lower in saturated fat, cholesterol, calories, and higher in vitamin E, vitamin C, beta-carotene, and Omega-3 fatty acids. Grass finished beef is tender, well marbled, and full of flavor when finished at a proper age on high-quality forage.
**CURED PORK AND BEEF: In order to be considered "cured," meat must contain a form of nitrite. Sodium nitrite is a government-approved curing ingredient. Rather than adding nitrites or nitrates, our meats are cured with celery powder or celery juice which is naturally rich in nitrates. Celery powder or juice can be used in any cured meat product and is often used as a curing agent for natural or organic products as well.
Currently, USDA regulations require meats cured with celery powder to be called "uncured" to distinguish them from conventionally cured products.
