Ishawooa Meatballs

These meatballs are so versatile. You can pair them with a pasta dish, use them in a meatball sub, have them on their own as an app, or our favorite — use them in a Mediterranean style gyro plate of harissa carrots, tzatziki, cucumber tomato salad, and some fresh homemade naan. You really can’t go wrong.

1 lb Ishawooa Mesa ground beef

1 lb Ishawooa Mesa ground pork

1 red bell pepper diced

1 yellow onion diced

3 gloves garlic minced

bundle of fresh parsley and whatever other herbs you enjoy minced

1/2 cup breadcrumbs

1 large egg

2 tsp crushed red pepper

1/2 cup grated parmesan or whatever cheese you have on hand

1 TBSP balsamic vinegar

1 tsp black pepper

1/2 tsp salt

Pre-heat your oven to 375 °F. Toss everything into a bowl and mix. Once mixed, form your meatballs to your desired size and place on a baking sheet. Once oven is ready throw them in for 20-30 min. You can check them with a meat thermometer, should read 165°F. Enjoy!
